Down Under Baked Cheesecake |

6 ounces
graham cracker crumbs 3 ounces butter -- melted 24 ounces cream cheese -- softened 1 cup sugar 4 whole eggs 1 teaspoon vanilla 1 cup heavy cream -- (whipping cream) 1 cup chocolate curls |

Combine graham cracker crumbs with melted butter and press into the bottom and sides of springform (or pie) pan. Place in refrigerator to set. Beat cream cheese, gradually adding sugar, until smooth. Beat in eggs, one at a time; then add vanilla. Pour into pan. Bake in a slow oven (about 275 to 300 degrees) for about 1 hour, or until knife inserted in the middle comes out clean. Turn the oven off and let the cake cool in the oven. It will crack on the top. Cover with the heavy cream when cooled. Grate the chocolate and sprinkle on top. Chill and serve. *Suggestion* Slice the pie, then pour the heavy cream over it to allow the cream to soak in better. |
